This was our first of two trips to Sayville on Long Island.   We improved on our pork, but the brisket (first place in the prior contest) finished near the bottom.   After that experience, we started to think a lot more about being consistent in our processes.   Sayville was also the most difficult contest to date in terms of weather.  An overnight cold front came through with 50mph wind guests, and a lot of rain.   We lost power for much of the night, and the venue was flooded.  We did have tent walls for the first time at this contest, and it's a good thing we did.   Being prepared for any kind of adverse weather is essential in competition BBQ.
